Ingredients:
1 cup fat-free cottage cheese
1/2 cup cucumber, sliced
1/2 cup cherry tomatoes, halved
1/2 avocado, sliced
1 large hardboiled egg, halved
1 medium scallion, sliced
1 1/2 tsp. sesame seeds, toasted
1 pinch salt, optional
1 pinch black pepper, optional
Directions:
Step 1:
Spoon cottage cheese into a shallow bowl.
Step 2:
Arrange the cucumber, tomatoes, avocado and egg on top.
Step 3:
Sprinkle with the scallion, sesame seeds, salt and pepper, if using.
