Watermelon berry fruit salad and cottage cheese

Ingredients:

4 cups watermelon

2 cups raspberries

2 cups strawberries

2 cups blueberries

1 cup blackberries

16 oz. cottage cheese

1 bunch mint leaves, chopped

Honey, to taste

Directions:

STEP 1: Cut watermelon into cubes.

STEP 2: Use a star-shaped cookie cutter to cut 6–7 stars.

STEP 4: Gently mix to combine.

STEP 5: Top with cottage cheese dollops and watermelon stars.

STEP 6: Garnish with mint leaves and a drizzle of honey

Watermelon cucumber cooler

Ingredients:

6 cups cubed watermelon, plus wedges for garnish

1 English cucumber, peeled and cut into chunks, plus slices for garnish

2 tbsp. honey

Ice

Directions:

STEP 1: In a blender, combine watermelon, cucumber and honey.

STEP 2: Blend for about 1 minute or until smooth.

STEP 3: Fill a large pitcher halfway with ice.

STEP 4: Gently mix to combine.

STEP 5: Strain watermelon mixture through a fine mesh strainer into the pitcher.

STEP 6: Garnish with watermelon wedge and cucumber slices when ready to serve.
