Stewed apples are a cozy way to support gut health. Gently cooking apples releases pectin — a natural fiber that feeds good gut bacteria and eases bloating and digestion. Enjoy 2 large spoonfuls a day on their own or as a yogurt or oatmeal topping. Use whatever apples you have on hand for this recipe. A mix of tart and sweet varieties works especially well.

Ingredients:

4–5 medium apples

1 cup water

1 tsp. cinnamon

1 tsp. vanilla extract (optional)

Optional: a slice of fresh ginger, a few cloves, or 1 tbsp. lemon juice for flavor

Directions:
Step 1:

Wash and chop the apples (skin on for extra fiber).

Step 2:

Combine all ingredients in a saucepan.

Step 3:

Bring to a simmer over low to medium heat.

Step 4:

Cover the pan and let the apples cook gently for about 10–20 minutes, stirring occasionally, until soft and glossy.

Step 5:

Let cool slightly, until they reach your desired consistency. Keep in mind the apples will thicken as they cool.

Step 6:

Refrigerate in a glass container for up to 4 days.
